To prepare the cake
- 200 g baking flour
- 1 tsp baking power
- 135 ml of milk
- 100 g raisins
- 100 g brown sugar
- 1/2 tsp Mixed spices
- A pinch of salt
- 1 Big Egg beaten
- The zest of a lemon
- 75g butter
- 100 g raisins Sultans
For sweet icing
- 125 g sugar Glass
- 1/2 lemon juice
- Brown Sugar for cooking.
Instructions
- Well grease an 18cm cake tin and line the base with grease proof paper.
- Sieve together the flour, salt and spice, rub in the butter whith a mix in an electric mixer. Add the sugar, raisins and sultanas. Add the egg and milk so that the mixture drops from a spoon when shaken.
- Turn the mixture into your cake tin cover with a light layer of the crunchy brown sugar on top and bake in a pre heated oven for an hour or until the cake is golden and a skewer comes out clean when inserted into the middle of the cake.
- When baked leave in the tin for five minutes before turning out onto a wire rack to cool.
